Substitutions

Stuck without a needed ingredient? Here's a list of common substitutions. Your results may be a little different than usual, especially in baking.

YOGURT is a miracle-worker. Use it instead of...

Mayonnaise 1 tsp Dijon mustard + 1 cup plain yogurt, salt and pepper
Sour cream Plain or vanilla yogurt + 1 tsp baking soda added to dry ingredients
Cream cheesePut plain yogurt in a coffee-filter-lined strainer, over a large bowl. Cover and refrigerate 24 hours. Save the whey for baking!
Soup base2 Tb flour + 1 cup plain yogurt

 

General Substitutions

1 tsp. Baking powder 1/3 tsp. baking soda + 1/2 tsp. Cream of tartar
1 cup Cake flour 1 cup less 2 Tb. all-purpose flour
1 Tb. Flour for thickening 1 1/2 tsp. cornstarch or arrowroot
1 1/2 tsp. Arrowroot 1 Tb. Flour + 1 1/2 tsp. cornstarch
1 cup self-raising flour 1 cup all-purpose flour plus 1 1/2 tsp. baking powder and 1/2 tsp. salt
Whole eggs two egg whites for each whole egg + 1 Tb. vegetable oil
1 cup Sour cream 1/3 cup melted butter + 3/4 cup buttermilk
1 cup Buttermilk 1 cup milk mixed with 1 Tb. white vinegar; let stand 10 minutes. Or 1 cup yogurt.
1 oz. Baking chocolate 3 Tb. cocoa + 1 Tb. Shortening or butter
1 cup Dry bread crumbs 3/4 cup fine cracker crumbs
1 tsp. Lemon juice 1/2 tsp. White vinegar
1 clove garlic 1/8 tsp. Garlic powder
1 Tb. Fresh herbs 1 tsp. Dried herbs
1 tsp. Allspice 1/2 tsp cinnamon and 1/2 tsp ground cloves
1 cup honey 1 1/4 cup sugar + 1/4 cup water
1 cup light corn syrup 1 1/4 cup light brown sugar and 1/3 cup water
1 cup dark corn syrup 3/4 cup Light Corn Syrup plus 1/4 cup Molasses OR 1 cup Light Corn Syrup plus 1 Tb. brown sugar
