How can I find enough time to prepare a nutritious dinner for my family? I work a full-time job.
Answer
Relax! Research has shown that employed moms do as good a job feeding their children as moms who don't work. With everyone pitching in to help with food preparation and cleanup, it's possible to create quick, tasty nutritious meals that the entire family can sit down and enjoy together.
When you're short on time, keep the meal simple. Spaghetti or a purchased deli roasted chicken, salad, rolls, milk and fruit can be put on the table quickly. Young children can help wash and tear lettuce and put it in the salad bowl while you prepare the entrée or re-heat the roasted chicken. When you eat out, plan for leftovers. The rest of the pizza can be served for lunch with a vegetable or fruit salad the next day.
When you do have time to cook, double the main course recipe and freeze the extra portion to serve on a busy evening. Encourage your child's curiosity about different foods and how to prepare them. You may spark an interest in cooking and eating! Lastly, rest assured that a hectic work schedule need not adversely affect your child's diet.
