If my son enjoys foods such as chicken tenders, macaroni and cheese, fish sticks and meatballs, how should I send these items to school? Please help, he does not like sandwiches, he is starting Pre-K....what are my alternatives?!?
Answer
It is especially important to take extra precautions and practice safe food handling when packing a school lunch. If lunches are not refrigerated, they provide the perfect environment for bacteria in the food to multiply rapidly and cause food borne illness. Send a frozen 100% juice box or ice pack in his insulated lunch box to keep the contents cold until lunchtime.

Many children do not like sandwiches for lunch. It’s great to hear that you are being flexible and sending healthy foods that he will eat. So stock up on airtight containers and send salads with chicken tenders, rice bowls (rice topped with last nights leftover meat), pasta mixed with vegetables, hard boiled eggs, trail mix, yogurt and fruit salad. One of my daughter’s favorite is chicken vegetable soup sent in a thermos or vegetable sushi and edamame (cold soy beans).
